Lettuce Taco Wraps

Did you indulge for National Margarita Day yesterday?  Get back on track today with this healthy, protein rich dinner recipe to keep the fiesta going. These lettuce taco wraps are a one-pot recipe is super easy to make, it’ll be about 10 minutes of prep and 10 minutes of cooking, then voila you’re ready to eat.

Lettuce Taco WrapsIngredients

  • 1 tablespoon olive oil, avocado oil, or grapeseed oil
  • 1 pound lean ground turkey
  • 1 cup salsa
  • 1 (4-ounce) can diced green chiles (look for the lower sodium marked cans)
  • 1 tablespoon taco seasoning
  • 1 (15-ounce) can corn kernels, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 tablespoons chopped fresh cilantro leaves
  • freshly ground black pepper, to taste
  • Sea Salt, if you must salt at all…
  • Chili Powder, for some extra kick (optional)
  • 1 head butter lettuce
  • 1/4 cup plain greek yogurt (optional)

Instructions

  • Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain any excess fat though there shouldn’t be much.
  • Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper or chili powder if using.
  • Separate your lettuce leafs.  Scoop your turkey mixture into the center of the leaf.  Garnish with a dollop of Greek yogurt if desired.
  • You can also top with fresh made salsa or guacamole!
